BTDT! but it was decades ago, so my experience (much less traffic etc)
is probably no longer relevant.
We did a fortnight into "Little Switzerland" and back, carrying camping equipment and staying at various "Camping Muncipal" - generally good and
cheap. Cheap wine, sunshine and, if you time it right, a lot of the locals
will be on holiday in the South, so quietish roads.
Also worth a taste is Calvados, a distilled apple product.
However I do expect that the French Way of closing all shops at lunchtime
is still in force!

and accommodation info. There seems to be a route which is largely railway path and I wondered about how easy it is to get on and off it, and whether there are things to see and do, and places to get food and drink - some of the route seems quite remote.
We’re experienced but quite casual cyclists - 30-40 miles a day is our preferred distance and the website above suggests a 5 day trip, about 250
km, would be about right.
I'd find that far too pessimitic; 10 mph is achievable without too much
effort - you'll be at your destination by lunchtime!

Obviously you'll want to take in Mont St Michel.
Dol-de-Bretagne has a lot of old buildings and a good view from the actual
Dol.
If you're interested in tidal power the barrage at Dinant does a tour.
