Would a sheet of 9mm plus a sheet of 6mm do you? Not sure of the tolerances but it would leave 1mm for glue?
You can get 9mm melamine faced ply (I think, this website isn't super clear):

but you can also get somebody to do the facing for you (people who make
kitchen units have the presses)
