Well if it’s an Intel Mac, internet recovery is an option. If you’ve another Mac you could create a bootable installer on a USB stick.

I've got it into internet recovery now but all it will offer me as an OS
is Lion, that being the original OS it came with. I was running Monterey
    before I started this.

You should be able to upgrade but maybe not in one go! Maybe to Mojave and
    then to Monterey.

There’s always the USB bootable installer route.

Trouble is I can't select the disc to install it, I'm not being shown
    the hard drive icon.

I'll have to get a 14GB+ USB stick, the biggest one I've got is 6GB

Does Monterey show as an option in the App Store with Lion running?

Finally got the computer to show me the Hard Drive, after a disc repair,
now downloading Mountain Lion and will try working my way back from there.

    Yup!

Successfully got it back to Catalina, the latest it will support. Now
trying to rest the NVRAM to return it to set up condition. Get the
multiple bongs and white screens while I hold down the required keys,
but when I release them it boots back into the temporary setup I used to
update the OS. Even tried using a wired USB keyboard (From my old G4!),
no difference. Any useful tricks? I've read through the relevant support
    pages but without success.
