I decided to tidy out the desk drawer that was crammed with all the old Lacie disks (and their rats' nest of cables), that I used to use for backups.
I decided to tidy (i.e. empty) the disks as well, before sending them for recycle - I just used the Trash.
I now realise that one of the disks contained a couple of pw-protected .sparseimages which I'd rather have hung on to, had I devoted a moment's thought to the operation.
Has anyone ever used one of those "Undelete" utilities, that they could recommend?

I have used AppCleaner from <http://freemacsoft.net> but usually just dragging the app from the Applications folder to the Wastebasket
suffices. Anything left behind just seems to be settings stuff which can
be quite useful if you then re-install the app. But I guess if you're
going to recycle disks then it's worth removing app remnants as well.

I’ve also found that a decent search tool such as Find Any File can be
useful at locating everything associated with an app you want rid of.
I think the OP wants to recover files?

Disk Drill needs to be already installed to enable it to recover deleted files using its "Recovery Vault" technology, so it probably won't be
that good at recovering data if installed retrospectively. As I was once
told - Regular backups are the key in minimising permanent data loss.
