I'm just temporarily hiding some text on a pdf by plonking a white box
over it (so at first glance it's invisible).
Two options: 1. 'Export as PDF...' and 2. 'Export...' -> 'Format' -> 'PDF'
If I reopen the first after export, I can highlight the text and see
there's a shape underneath.
If I reopen the second after export, I can actually drag the box away
and view the text.
Why the difference? Also, the second is slightly smaller (3.2MB vs 3.4MB)

It sort of suggests the first option creates a read only file but the
second is editable. I wonder if the files behave similarly with other PDF apps?

Most browsers can render pdfs natively so that's a cheap way to check. Not >> safari though as I think it uses the same renderer as Preview.
Actually I had noticed that and have seen other browsers such as Firefox sometimes do a better job.
As an aside, to truly hide text there's the "redact" option in Preview.

As an aside, to truly hide text there's the "redact" option in Preview.
