There is a science of laughter (gelotology), and its role in
conversation is undoubtedly interesting. But who needs another "day"
for it? Seeing if you could abstain from laughing for a whole day might
be an interesting way to observe it.
As you will recall if you read The Name of Rose, or saw the film (shown
on television a few days ago), you will know that Brother Jorge
considered laughing to be a sin and contrary to the teachings of the
Church.
