Buoyancy depends on gravity to work. The formula of buoyancy INCLUDE
gravity. Without gravity, buoyancy just don't work.
And, no, there is NO universal down direction. Down is always relative
to the observer and the closest planetary, or larger, mass.
Down is toward the centre of mass, up is away from it.
Horizontal is also local, being the perpendicular to the local vertical.
Level is not the same as horizontal. Level means «At a CONSTANT elevation».
Normal peoples may not know EXACTLY what gravity really is, but, what we
know about it is extremely accurate.
It may not be a real force, BUT, it manifests itself as a force, it act
as a force. So, we can treat it as an actual force.
