• Twice backed potato tonight

    I mentioned I made two baked potatoes yesterday. Had a half with
    dinner, have three more halves.

    Today, scooped out the innards, mixed in some sharp cheddar, butter, seasonings. Nothing really fancy but tasty. 12 minutes in the air
    fryer and they are heated a a bit of extra doneness on top.

    Two more for later this week.

    My wife used to do twice baked potatoes once in a while. He would bake
    them, scoop them them out, mix the potatoes up with butter, cream and
    Parmesan and then put them back to cook some more.

    We haven't done that in ages because she does the low carb thing and I
    am sort of off potatoes lately. She cooked some potatoes for tonight.
    She chopped and par boiled a couple potatoes and then finished them in
    the air fryer. She served up only one of those medium sized spuds for
    the two of us and we didn't even eat all of that.
