• O.T. --- Dental Appointment Today and Light Eating --- O.T.

    Tonight's dinner consisted of a bowl of chicken and rice
    soup my neighbor made for me due to a dental procedure
    today. After leaving the office and picking up three
    prescriptions I thought about a milk shake. Nope, not
    gonna pay those prices so I stopped at Aldi and bought
    a half gallon of vanilla ice cream, chocolate sauce and
    hot fudge sauce. (I like chocolate!) Also, a jar of
    caramel sauce. A vanilla shake with an egg dropped
    into the mix would be good as well.

    I came home, got the stick blender out, poured a little
    glug of half-n-half into the container and made myself
    a sorta soft-serve chocolate milk shake. The soup was
    tasty and much appreciated and I suspect scrambled eggs
    will be part of my menu and most likely some mashed
    potatoes as well. Oatmeal is another good option.

    I'll be on soft foods for 2 or 3 or more days due to a
    granular bone graft.

    I've got several different types of liquor here, but

    Scrambled eggs are a given. (So is soup.) Maybe some sort of breakfast casserole? Or cheese grits casserole? One example here:

    "Cheese Grits Casserole

    4 cups milk
    1/4 c. butter
    1 c. uncooked quick-cooking grits
    1 large egg, lightly beaten
    2 c. (8 oz.) shredded sharp Cheddar cheese
    1 tsp. salt
    1/2 tsp. pepper
    1/4 c. grated Parmesan cheese

    Preheat oven to 350°. Bring milk just to a boil in a large saucepan over medium-high heat; gradually whisk in butter and grits. Reduce heat, and
    simmer, whisking constantly, 5 to 7 minutes or until grits are done.
    Remove from heat.

    Stir in egg and next 3 ingredients. Pour into a lightly greased 11- x
    7-inch baking dish. Sprinkle with grated Parmesan cheese.

    Bake, covered, at 350° for 35 to 40 minutes or until mixture is set.
    Let stand 10 minutes before serving."

    and very tasty. I'm really, really want some homemade
    tomato soup, but that might be a tad too acidy at this
    time.

    I would agree with that. The chicken & rice soup your neighbor gave you
    sounds good. I'm also thinking (but you probably don't have) pureed
    butternut squash soup or something similar. You probably don't have any butternut squash. Hmmm, got any canned pumpkin?

    Lots of people don't. The casserole would fit the bill for soft.

    The first time I had cheese grits casserole was at a company pot luck
    way back in 1990. A woman named Mary brought it. I'd been living in
    the mid-south since I was 13 but I'd never heard of cheese grits
    casserole. Mary was from Savannah, GA. I tasted it and said WOW! What
    is this? First time hearing about grits casserole. I wish I'd gotten
    her recipe. I can only guess it was like the one I found online. She
    left the company a couple of months later to move back to Georgia.

    Yeah, I can imagine. My middle brother had to have bone grafts in his
    jaw before he had dental implants. I went to his house and cooked him
    soft food, too.

    I hope yours heals quickly. Meanwhile, eggs are your friend. :)

    What am I supposed to say? That brother expected me to take care of
    him. I drove him to/from appointments. He had ALL of his teeth
    replaced over the course of a year with implants. Multiple bone grafts.
    I also took care of him after he had half a lobe of one of his lungs
    removed due to cancer. He expected to be waited on. Nothing like you,
    Cindy.

    I did several soups for Don this past week too as he recovered from
    surgery,

    Here's a simple one done with beef broth normally but I used a can of
    campells beefy mushroom.

    2 cans Campbell's beefy mushroom soup, 2 cans water (it will simmer
    down a bit).
    a full handful of fresh green beans, cut bitesized
    1 carrot shaved down then shavings cut across to bite sized
    3 large cremeni mushrooms, cut to bite sized
    1 can store brand diced tomatoes
    1 small yellow summer squash, cut to 1/2 moons (added at the end)
    Fresh Basil to taste from the garden (1/2tsp)
    Black pepper (1/4 to 1/2 tsp)
    pinch of garlic powder
    Whites of 2 green onions, cut across so you get pretty rounds

    Simmer all but the squash for about 1 hour. Add the squash which may
    be presteamed in a wet towel in the microwave if desired) and heat
    until squash ready, Serve with side bowl of basmati rice which the
    eater may decide to add to the soup or have separate,

    In you case, if the texture of the green beans is a bit much (shouldn't
    be after a 1 hour simmer but you'd know best) this one will work fine
    with canned if you don't mind canned.
