Cyser vinegar?

Yupp, I make vinegar out of the swill from my winemaking. (The stuff that is full of lees)
Put it in a growler, add some active culture vinegar and it starts fizzing away into vinegar. Tastes great and is what I use to deglaze my pans for cooking and making pan sauces.
