That works out a bit low, I think. Party of 6, sit down, average cost per person of $40, 18% is $43.20. By your formula I get $0.65 per minute (1.3 x 30/60). To reach the 18% level, it would take a bit over 66 minutes. If you are counting full
elapsed time that the server is responsible for your table, then it's a good estimate. But if you are only counting the time the server is physically at your table, either you are doing a 4 hour meal or you need to up the rate to match the 18% level.
