I'm going to doubt this claim. Just because it intermittently switches
to dark mode after restarting doesn't necessarily mean an update caused
it. For all we know, you've got some piece of software installed that is causing this behavior.

I'm also curious: Have you ever tried backing up your system with Time
Machine, then reinstalling macOS and restoring the backup?

I have serious doubts about this claim. It is much more probable that
you installed an app that interferes with your OS-settings.
