    If I allow someone to see my location via the Find My app on my iPhone.
    can I tell when or how often they check it?

    No. Note that Apple Find My "rate" of transmission to the other person
    is quite low. Maybe once per minute (maybe a little faster).

    You also limit the time (not many choices though) that they can receive
    your position and can cancel at any time.

    If you want someone to know your position in near real time (2 - 10
    seconds delay), then an app like Glympse is preferable. Also has better
    time of exposure options.
