I was texting back and forth with my Android friend and typed 312 miles in one of the SMS messages. After the message went through I noticed _312
miles_ was underlined. When I clicked on it the conversion to kilometers automatically appeared. The word “kilometer” was also in the conversation so I don’t know if iOS keyed in on that.
I’ve seen such behavior with phone numbers and addresses but hadn’t seen it
with distances before. Any other such behaviors observed in Messages?

Just tried it and
indeed I get an underline and km.

Does it scare you in terms of personal data collection how that
happened?
First, you'll need to supply evidence of your insinuation that this data
is supposedly being collected or sent off of the device.

On the phone since messages between two Apple devices would be encrypted end-to-end and Apple's servers cannot decrypt the message.

Not likely.
On reading your post I sent a few text messages to my SO's iPhone.
It is iOS 15 (as it is an iPhone 7 and can't be updated to 16).
So I send it from iOS 16 - and on that phone the conversion(s) are
offered. On her phone they are not.
On her iPad they are.
OTOH, if I send "Try 32 miles" from her phone to mine, then the
conversion appears on my phone, but not (of course) hers.
Nor does it appear on my Watch or my iMac (Messages) or her MBA.
(My iMac is a few years back in OS level).
I'll update her MBA to the current level (13.2.1) sometime this week
to see if we get the conversion option there... (She's at 12.x).
So this seems to be an Apple thing and only on the latest v. of iOS
and Pad OS. (Not sure about Mac OS yet).

a. are you happy with the service?
b. how do you make payments?
c. have you tried using port 80?
d. why did you choose them?
I had used a bunch of different free services through the years,
including ones provided by various internet service providers I used.
Most of them were unreliable, slow, or had other issues. I recall spam
being particularly bad with some of them.
When my then-current ISP
announced they were shutting down their news service, I started
researching paid services.
Individual was recommended by a few people
in different places on the net (including some folks here, IIRC), and
after reading their policies and FAQs, I decided to give them ago. And
I've never looked back.
