Choice Grade has been garbage since the corrupt politicians some
decades back moved up the various grades to where the dog food
stuff labeled Select could be called Choice, and the Choice grade
became the dog food junk that used to be Select. As for what used
to be Choice became the present day Prime.
The counter argument is that consumers have expressed a strong preference for lean/grass fed beef.
Nonsense.

Since Prime meant well marbled, it wasn't selling well. In
any case, many local butchers sell ungraded beef that is well marbled. There's
no law that states retail beef has to be USDA graded.
It wasn't selling well because it was more expensive than Choice meat.
The Prime steaks and ribs from way back when could be cut - separated
- with your fork. It damn well melted in your mouth.
Grass fed beef was born of money saving greed and environmental
bullcrap. It's junk.
They have also ruined pretzels and such by eliminating almost all the
salt on them. Saving a few more cents a bag was the reason, not the
customer's health.
I'm a few months shy of ninety years of age. I remember back when
Prime steak cost me $2.50 a pound. I also remember well the day when
a buddy of mine was visiting and I shared some of my Prime beef
dinner with him. He couldn't believe the difference between it and
the Choice he had eaten most of his life.
I really don't expect the modern generations to have any real idea as
to the difference in food tastes. What do these few generations know
of taste who eat hot dog sandwiches buried with cheese-covered chili?
