I can purchase movies and music for download via iTunes today.

At the risk of pointing you to a cesspool, "Digital Rights Management".
Most streaming services require a special player that unlocks the DRM
content to be played. Doing this as a stream means that people
(usually) don't have the raw data that is downloaded. In the rare case
that someone is creative, they usually don't have the keys to unlock
what they … creatively captured.
