    I have an idea, but it's novel - so it's not "directly" what you asked.
    But it might work.

    1. I use a variety of open source keyboards which are quite similar
    (they may even be sharing code under the hood for all I know)

    2. Assuming they're similar, they're 'essentially the same keyboard
    (which means, switching between them is a simple two-taps)

    3. If you have "Show Keyboard Button = on" set...

    4. All you need to do is set one open source keyboard to auto correct.

    And set another (very similar) open source keyboard to NOT auto correct.

    5. When you want to turn off auto correct, you switch keyboards.
    When you want to turn it back on, you switch keyboards.

    Let me test the number of taps that will take using my PulseSMS default
    text messenger using the text field (which pops up keyboard 1 by default).

    To switch keyboards:
    a. One tap on the keyboard button at the bottom right of the keyboard
    b. One tap to switch keyboard to one of the choices that pops up

    That's it.
    Two taps.

    I switched back with the same two taps.

    In summary, using a bit of ingenuity in the thought processes, the best I
    can come up with, offhand anyway, is a two-tap solution; however someone
    more intelligent than I am will likely offer the OP a one-tap solution
    (where everyone benefits). Let us know how it works out for you.

    I have added French/FR, and can now switch between EN/FR with a long
    press on the space bar, the spell checker and suggested words seem to
    switch with the keyboard language ...

    While I avoid any Google package that I don't have to use...

    Along that similar vein, I belatedly just noticed while testing the two-tap solution for the OP, when I switched from my FOSS default keyboard
    (OpenBoard) to a similar FOSS keyboard (HeliBoard), that the HeliBoard
    keyboard has a language switch key similar to what Andy suggests above.
